1 cup water

2 cups raisins

1 tsp cinnamon

1 tsp vanilla

¼ tsp cloves or mace

1 cup brown sugar

1/3 cup oil

¼ tsp nutmeg

¼ tsp salt

2 cups flour

1 tsp baking soda

½ tsp baking powder


Put water, raisins, cinnamon, cloves, oil, brown sugar, nutmeg and salt in a saucepan and mix.  Bring to a boil and cook 3 minutes.  Cool then stir the flour, baking soda and baking powder together, then add to cooked mixture and stir well.

Scrape batter into a well-oiled loaf pan and bake at 350 degrees F for 60 minutes or until cake tests done.

May use carob or cocoa icing on top, or use with fruit or cashew cream. 

(May substitute soy or almond milk instead of water.)

Icing: 1/2 oz copha, 1 1/4 level Tbsp flour, pinch salt, 3 TBSP soy milk, 2 TBSP cocoa (or carob powder), 2 level Tbsp brown sugar, 1 cup sifted icing sugar.

Melt copha, add flour and remaining ingredients, and bring to the boil, stirring constantly.  Cool a little and spread on cake before icing goes firm.
